Abstract
Selon l'invention, on met en contact le jus soit du fruit ou légume lui-même soit issu des peaux de fruits soit encore de la totalité du fruit ou légume broyé ou des mélanges de tels jus, avec une petite quantité d'un extrait enzymatique issu du développement d'un micro-organisme (par exemple un champignon comme l'Aspergillus niger) dans un milieu de culture comprenant, outre des sels minéraux habituels, un substrat à base de pépins d'agrumes et un glucide comme par exemple un holoside comme le saccharose ou analogue. Application, en particulier, au traitement de divers agrumes comme par exemple des oranges pour l'obtention de jus exempts de substances amères des types : limonine et flavonoïdes.
