Abstract

L'invention concerne un procédé de désacidification d'un extrait de café sans introduction de produits étrangers, par absorption sélective à l'aide d'un matériau naturel, le chitosane. Dans ce procédé, on met en contact l'extrait avec du chitosane sous forme divisée et on recueille l'extrait désacidifié après l'avoir séparé du chitosane.
