Abstract

The installation comprises mincer(s), mixer(s), conveyors and moulding press together with drive motors and mechanical transmission. The complete installation with the exception of drive motors is now enclosed in a cold chamber at about -3 to -8 degrees C. The motors are in a separate enclosure, outside the cold chamber, and drive shafts to the machines pass through apertures in the wall which divides the cold room from the motor enclosure. The cold chamber also has an entry aperture for raw materials and a discharge aperture for finished prods. The installation pref comprises a rapid cooling system for material immediately following its first mincing stage. The rapid cooling may be by means of cold air current or by contact with conveyor surfaces chilled by a fluid refrigerant, e.g. liq. nitrogen, brine. The beefburgers, etc can be delivered as fresh or frozen produce. Exclusion of electric motors from the cold chamber eliminates sources of constant heat output and so facilitates maintenance of low temp extra rapid cooling of prod. Prevents bacterial problems. Cold chamber can be washed out now the motors are outside.
