Abstract

Procédé de fabrication de sirops contenant des oligosaccharides terminés par du fructose. Il consiste à soumettre un mélange contenant de l'amidon liquéfié et du fructose, ou du sucrose, à l'action d'une cyclodextrineglucano-transférase préalablement immobilisée. Les sirops obtenus, digestibles et absorbables, ne présentent pas d'activité cariogène.
