Abstract

Four de boulangerie à étages. Il comporte à mi-hauteur de chaque chambre de cuisson des supports latéraux, sur lesquels des plaques portant des articles de petites dimensions peuvent être posées. Les parois latérales de ces chambres sont perforées sur toute leur surface ou comportent de préférence des ouvertures ménagées juste sous la voûte et juste sous les supports. Ces dernières ouvertures peuvent être obturées pour la cuisson du pain. Application notamment aux fours pour artisans boulangers-pâtissiers.
