Abstract

L'invention a pour objet un procédé suivant lequel : a. On soumet un lactosérum, préconcentré ou non, à une déminéralisation puis à une hydrolyse enzymatique par une lactase en addition perdue ou fixée sur support, dans cet ordre ou inversement; b. On chauffe le lacto-sérum déminéralysé et hydrolysé à une température supérieure à 85 degrés C, sous agitation constante, à pH compris entre 5,60 et 6,40 environ, pour précipiter les protéines du sérum sous une forme très fine et hydrophile, ces conditions opératoires devant conférer au produit fini des caractéristiques rhéologiques particulières; et c. On concentre sous vide le sérum laiteux ainsi obtenu jusqu'à l'obtention de la teneur en matières sèches désirée.
