Abstract

L'invention concerne une cuve comprenant une cuve principale destinée à contenir le moût, une cuve supérieure superposée à la cuve principale, des moyens permettant d'amener périodiquement une partie du liquide du fond de la cuve principale à la cuve supérieure et de décharger périodiquement ce liquide de la cuve supérieure dans la cuve principale de manière à arroser le chapeau qui flotte sur le moût contenu dans la cuve principale. Le fond de la cuve supérieure est formé d'un élément séparé de la paroi latérale de la cuve de fermentation et supporté de manière à ne pas interrompre la continuité de cette paroi et les moyens servant à transvaser le liquide du fond de la cuve principale à la cuve supérieure sont constitués par une électro-pompe commandée par un temporisateur programmable.
