Abstract

Se describe una cuba de fermentación, en particular para instalaciones de vinificación en rojo, que comprende una cuba (9) principal destinada a contener el mosto, una cuba (10) superior superpuesta a la cuba (9) principal, medios para alimentar (14, 15, 16) periódicamente una parte del mosto desde el fondo de la cuba (9) principal hasta la cuba (10) superior, medios (17) de válvula que definen, junto con el fondo de la cuba (10) superior, un vano de eflujo (18) de amplitud variable entre una posición de cierre y una posición de máxima apertura, y capacitados para descargar el mosto desde la cuba (10) superior hasta la cuba (9) principal con el fin de rociar la capa de vinaza flotante sobre el mosto contenido en la cuba (9) principal, y medios (21) actuadores asociados a dichos medios (17) de válvula para comandarlos en la apertura y el cierre; los medios (21) actuadores comprenden un actuador de comando electromagnético, estando prevista opcionalmente una unidad (25) de control y comando predispuesta para determinar, a través de los citados medios (21) actuadores, la posición y/o la ley del movimiento de apertura/cierre de los medios de válvula.
