Abstract

The crystalliser takes the form of a temp. controlled vessel with inlet and outlet pipes for wine which are disposed so that the liq. passes through the vessel with a rising, turbulent, circulatory motion. Entrained microcrystals start to rise through already-formed, descending crystals. The crystals agglomerate with the microcrystals which they meet and the enlarging crystals settle towards the bottom of the vessel to be removed via a purge valve. The vessel is pref. a vertical, cylindrical shell with acutely coned base section and a less acutely coned upper section. The wine inlet pipe pref. delivers tangentially at the lower end of the cylindrical section of the vessel. The outlet pipe pref. extracts from the top of the coned upper section. The crystalliser is designed for continuous, flowline operation. The flow arrangement produces very rapid deposition of crystals and ensures sepn. of microcrystals.
