Il consiste à chauffer une solution aqueuse d'une matière protéinique de graine de soja dans une gamme de température et de pH correspondant à la surface définie par les points ABCD. Application de la matière de protéine de soja modifiée ainsi obtenue comme liant dans un produit alimentaire de remplacement
