Abstract

La présente invention concerne un procédé perfectionné d'enrichissement en protéines de produits comestibles. Il s'agit d'un procédé du type de celui revendiqué dans le brevet principal, caractérisé en ce que l'on utilise comme substrat sous forme divisée une farine d'amidon cuite dont le temps de sédimentation est inférieur à 30 minutes. Ce procédé permet d'obtenir un produit structuré contenant un pourcentage élevé de protéines.
