Abstract
PURPOSE: To prepare the titled food having excellent elasticity, taste, and shape stability, by compounding heated and mashed potatoes with corn starch converted to alpha-form.
CONSTITUTION: Pretreated potatoes are heated and mashed. Corn starch converted to alpha-form is added to the potato, and kneaded for 5W10min until the composition becomes glutinous like a rice cake. The amount of the corn starch is about 10wt% of the whole composition. The composition is if necessary mixed with onion, oil or fat, table salt, etc., formed to a desired form, and without applying a coating, fried in an oil at a low temperature for a short time, pref. at about 160°C for about 1min, and frozen.
