Abstract
Carbon dioxide gas is drawn directly from the passage from which marc is continuously discharged, as wall as from head space in the fermenting chamber. All this CO2 is passed through a moisture trap to separate out droplets of wine. The dried CO2 is put through a compressor and the compressed gas then cooled to a low temp. to condense residual alcohol which is recycled into the wine. The CO2 is further compressed at a very low temp. and stored. Max. utilisation of alcohol and CO2 produced from continuous wine fermenter is achieved. The alcohol recovery and recycling take place in closed circuit.
