Abstract

A free-flowing, highly water-soluble sweetening agent comprises an interlocked random aggregation of immobilised crystalline particles of an L-aspartic acid cpd. (I) interconnected at spaced-apart contact points via linkages formed by the drying of an initially dissolved minor portion of the cpd. (I). Cpd. (I) is pref. an alkyl (esp. methyl) ester of L-asparginyl-L-phenylalanine. The prod. can be used as a component of instant drink compsns., e.g. together with colorants, flavours and citric acid. The prod. dissolves more rapidly than the untreated cpd. (I).
