Abstract

A process for the prepn. of coffee chicory comprises drying of the chicory after forcing, the milling of the product obtd. ('cassette'), the agglomeration of the powder into granules, the roasting of the granules followed by cooling to give a product which is sold. The process is applied to bitter chicories (cichorium intybus) comprising better wild chicory, coffee chicory cultivated in the Calais-Dunkerque region and chicory witloof grown in N.France. The prod. is used both to make coffee and as flavourant for coffee. After drying the 'cassette' prod. is normally screened into different sizes and sent to a roaster who roasts the cassettes according to the size. Cooling and milling then occurs followed by sepn. of the black grains, and the light grains which are further ground are classified, agglomerated and conditioned. The process provide simplification also increased capacity for coffee chicory as the endive root after forcing is chemically very similar to that of coffee chicory.
