Abstract

A cutter for obtaining segments of raw cheese from a coagulated mass in a trough, has knife blades assembled on a vertically reciprocating beam entering the vessel from above. The free ends of the blades have a cutting edge, and their lengths correspond to the section of the semicircular trough. The blades are distributed uniformly across the beam, to the width of which, the width of the blades, about 10cm. is equal. The cutter imparts no motion to the mass of raw cheese which can be cut to any size required without damage.
