Abstract

Waste fragments of cheese from cutting operations are crused or chopped, then moulded under pressure of 0.5-1.5, pref. about 1 atmos. for several days, pref. about a week. The fragments are size-reduced, e.g. in a meat-chopping machine, to particles which are pref. of about 12 mm dia. Process reworks fragments of cut cheese left over from cutting matured cheeses into portions and slices for prepacking.
