Abstract

An edible whippable emulsion comprises (vol) 1-4 pts. oil, 4 pts. water and proteinaceous emulsifier consists of proteose peptone in an amt. 0.01-2 0 wt. % based on the wt. of water in the oil-water emulsion. The emulsion is used in the prepn. of whipped toppings and desserts etc. The proteose peptone exerts an antioxidant effect thus increasing the storage stability of unsatd. fat emulsions.
