Abstract
1341964 Pourable margarine UNILEVER Ltd 11 May 1971 [12 Feb 1970] 6906/70 Heading C5C A pourable margarine contains an emulsifier, but is substantially free of proteinaceous material. In the example, sunflower seed oil is blended with minor amounts of fully hardened rapeseed oil, monoglyceryl palmitate and lecithin, flavouring additives and vitamins. A solution of salt in water is added and emulsified in the oil phase. The emulsion is aerated with nitrogen and cooled in a scraped-surface heatexchanger. A product that is otherwise similar but contains milk solids is also described for comparison.
