Abstract

Base compsn. for edible gel/glaze contains 25-55 pts. wt. sodium alginate, pref. prepd. by neutralisation of alcoholic soln. of alginic acid, 0-30 pts. cold water-soluble starch, 5-25 pts. sodium hexametaphosphate, 3-10 pts, pref. 5-8 pts, calcium acid phosphate or in complete or partial replacement thereof, 5-20 pts. pref. 10-15 pts, calcium citrate, can be gelified by allowing to swell in water and adding an acid soln. of pH 2-4, e.g. citric acid or fruit juice. Glaze can be cooked, sterilised, is resistant to cutting, and gives transparent and highly shiny coating.
