Abstract

Potato protein is recovered from potato amnionic fluid by treating the liquid with nascent SO2 at a temp. which causes flocculation of the protein. Process is esp. useful for treating effluent waters from potato-processing factories after removal of starch and pulp, to give useful protein material. The liquor from pulverised potato after removal of the starch and pulp is pref. treated at pH 4.8 to 5.0 (inorganic acid) and temps. of 95-105 degrees C with a sulphite cpd. such as a sulphite, bisulphite, hydrosulphite and/or sulphite liquor as nascent SO2 source.
