Abstract
Confectionery prod. esp. a sweet made with pure, liq. honey in the natural state and coated with an isolating and protective layer, consists of a lamellar, pre-formed envelope of unleavened bread (1) which is inverted to form a cup and is filled with liq. uncrystallised honey. The cup, moulded in the form of a nut shell, has a plane peripheral edge; a pre-cut lid, of the same material, is applied and is kept in position by the honey which has been filled to the brim. The unleavened bread forms a leak-proof container for the honey; it can be impregnated with ascorbic or sorbic acid to protect the honey as well as the lid from oxidation. The whole is then coated with chocolate to reinforce the edible container ad protect the assembly from mechanical shock.
