Abstract

Fruit jellies are produced in a smooth or corrugated aluminium case which serves as a mould, preserving means, and presentation means for the jelly and which can be easily removed prior to consumption of the jelly. The aluminium case can be filled with the jelly by means of a pourer of the 'Mogul' type, and the jelly can be sprinkled with crystallised or other sugar to give it its final appearance. The process can be used for any preserve which is cast in a mould and of which the preservation properties are affected by air, and eliminates the conventional operations of lifting from the mould and candying, and guarantees preservation for a much longer period and presentation without further handling.
