Food-plant extracts soluble in fats, pref. ethereal fruit oils, esp. from southern fruit, or oleoresins, e.g. from pepper plants or dye concentrates, are prepd. by extg. moist, wet or partly dried plant matls., e.g. fruit spice plants or broken up or dispersed by-prods. formed in their prepn., with an organic solvent which has 20-40 wt. % solubility in water under the reaction conditions and boils below 60 degrees C at atmos. press., pref. having formula: H2n+1Cn-O-CH2-O-CnH2n+1 (where n 3), partic. methylal CH2(OME)2. An electrolyte and/or an alkaline reagent may be added in a desired dissolution step, in sepn. and/or in recovery of solvent. Ethereal fruit oils and oleoresins obtd. retain fine aroma, colour and natural anti-oxidants.
