Abstract
Aroma-supplying substances and proteins are extracted from animal raw materials, such as meat, poultry and wildfowl, without any chemical additions by a process which includes: cooking the raw materials in a liq. medium in a closed vessel; removing the liq. contg. the aromatic substances and proteins; rapid cooling of the liq. extract; separating suspended solids, notably in a centrifuge; concentrating the aromatic/protein liq. drying of the liq. and sterile packing of the liq. or spray-dried powder after cooling. The initial, natural aroma of the raw materials is retained even at sterilisation temps. as high at 125 degrees C. Duration of the extraction depends upon the raw material treated; it is, however, sufficient to ensure complete sterilisation. After extraction the liq. is conc. in vacuo at +40 degrees C and placed in sterile plastic bags; these are closed by welding and immediately frozen at -20 degrees C whilst awaiting transformation into powder.
