Abstract

Oven comprises a cooking enclosure with a door; the base consists of a movable metallic plate, its edges being engaged in supporting notches in the lateral walls. The atmos. in the enclosure is heated by two electric resistance heaters, arranged between a fan and the lateral walls. A fairing serves as a screen between the central emplacement which receives the dishes for cooking, and the fan. When the oven is in operation, a current of hot gases is established in the enclosure and follows a closed circuit. The temp. can be regulated between 50 and 300 degrees C. by a thermostat connected to the heaters. Only the gases intended for cooking the foodstuff are heated and not the whole atmos. of the enclosure. On this account the usual pre-heating of domestic ovens is not necessary. As the dishes are completely enveloped in the regularly renewed streams of hot gases, the cooking times are considerably reduced; heat losses are also avoided. The oven can be used as a grill and also for thawing frozen foods without cooking them.
