Abstract

In the oven smoke is ducted through a filter from the combustion space to the cooking chamber to improve the flavour and aroma of loaves and to give them the desirable characteristics of loaves baked on an open wood fire. The filter is packed with glass fibres and/or activated carbon to arrest heavy matter such as soot and tar while volatile aromas are allowed to pass through the cooking chamber is vented to atmosphere to create a draught which draws smoke through the filter duct from the combustion space.
