WOOD-BURNING PASTRY OVEN

Abstract:
A self-contained commercial oven, of clay and masonry construction, of a particular shape, and designed with specific characteristics for cooking pastries, pizzas or other similar foods, and differs from other stoves in that wood or a derivative of wood is used as the fuel, and is fired internally within the same container as the food.

Description

Specification:
This invention relates to a unique method of cooking certain types of foods such as pastries or pizzas.
It is common to bake such foods by means of ovens using gas or electric elements on a mass produced basis. While the taste of such products is acceptable, the purpose of this device is to elevate or enhance the taste of the product through the technique described herein.
Surprisingly, the taste level of such food is distinctly enhanced by such wood-firing means within a semi-cylindrical chamber, as coopared with standard methods used, such as gas or electricity, in other types and shapes of stoves or ovens.
The wood is located on either side of the oven, with the food to be baked located on the main surface, beside the fire. The direct heat, as well as the convection created by a rounded ceil-ing in the chamber achieves the cooking results desired. A secon-dary requirement is that the ~tack be located at the mouth of the oven to assist in proper convection and exiting of the products of combustion. Upon completion of the cooking operation, the oven door is closed on the interior wall of the mouth of the OV2D, thus separating the oven from the stack, allowing the fire to smother Dore quickly.
By ref~erence to the drawing, Figures A-A, B-B, and C-C denote the components generally required in the design.
(1) A fire clay horizontal container which is the cooking chamber, with side or end coDbustion sections for the fuel to be located and burned.
(2) A built-in stack at either the front or rear end of the cooking chamber, where the products of coDbustion are conveyed out of such chamber to a vent stack, and thus released to atmo~phere.

(3) A damper within the stack, made of fire proof material such as steel, to regulate the smoke release.

(5) ~ steel or heat resistant lid or mouth cover, located such that lid cover is between the oven proper and the stack.
t6) A steel or heat resistant lip for the food to be easily re-moved from the chamber when the food is cooked and ready.
(7) Insulation around the fire clay pot, of sufficient thickness to sustain the heat within the oven for a reasonable period for cooking purposes.

Claims (2)

1. An insulated cooking or baking oven of semi-cylindrical shape, on which the food to be cooked is located on the flat sur-face of the oven.
2. The fuel is wood or a wood derivative, which is fired on either side of the food, and on the same surface, such that there is direct heat impact, with no shielding or redirecting.
