Abstract

The biscuits pref. contain 10-25% of a gum such as Sterculia, Karaya, or Ispaghule or a carraghenate. Other ingredients which may be used are flour, skimmed milk an oil sugar, salt yeast and any desired flavouring. The flour mucilage, and yeast are mixed together, and the other ingredients mixed separately. These are then combined made into biscuits 4mm thick, and baked for is not >10 mins at 125-150 degrees C.
