Abstract

The meat is first coated with a first phase mixture consisting of the following, all in wt.%;- plain flour - 45-75; pre-agglutinated starch - 2-10; cornflour - 5-25; spices etc. =20. It is then browned by frying in oil. Water is then added together with the second gravy forming phase and this is an agglomerate of >=40 wt.% flour/pre agglutinated starch, 30 wt.% of cooking fat and again =20 wt.% of spices. Cooking continues over a gentle heat.
