Abstract

Vegetables are treated, before sterilization or freezing, with an aq. soln. at >=50 degrees C contg. 0.01-0.1 wt./vol.% of a cpd. of formula: (in which R1 is a 10-18C alkyl; R2 is H or an alkyl contg. is not >18C atoms; R3 and R4 are H, CH3, C2H5, C6H5CH2, or (m)ethyl substd. with OH, prim. amine, (m)ethoxycarbonyl gps.; R2, R3 and R4 may be together with N, an aromatic ring; alternatively, R3 and R4 may denote H(OCH2CH2)n, where n = 1-25; X- is Cl-, Br-, I-, SO4--, NO3, CH3COO- or C2H5SO3-). Thermal conversion of chlorophyll into the yellow phenophytin is suppressed.
