Abstract

The puff paste, from which flaky biscuits are baked, is fed as a band along a conveyor, and divided into longitudinal strips by slitting knives. A retangle of these strips is then divided into a batch of biscuit blanks by cutters which move transversely across the conveyor; the cut which separates this batch of blanks ready for baking from the remaining paste is made by twin cutters which trim out a complete, narrow, separate strip of paste, which is later reworked. This prevents the pulling and tearing of paste which occurs when the batch is separated by a single blade.
