1435278 Cutting bread KOMBINAT FORTSCHRITT LANDMASCHINEN NEUSTADT IN SACHSEN VEB 23 May 1974 [28 May 1973] 23031/74 Heading A4C A method of cutting bakery products such as bread, comprises cutting the product, while said product is at a core temperature of substantially 98‹C, with a band-knife having a toothed edge, the knife cutting speed being in the range of 7 to 10 metres per second and the product to be cut being advanced to the toothed edge at a rate in the range of 0À1 to 0À5 metres per second to give a rate of advance of the product in the range of 0À5 to 2À0 millimetres between entry of successive teeth of the cutting edge into the product. The toothed edge is maintained at a temperature below 7‹C and the product is irradiated with ultraviolet light during and/or prior to the feeding step. In the case of bread baked in tins, the bread is fed to the knife at an angle of 30 degrees to the horizontal.
