Abstract

Aromatic food products based on spices, condiments, seasonings or other aromatising products, such as parsley or onions, are used in a dissolve or finely divided state as 0.1-30% in a liquid edible vehicle placed in an aerosol bomb. The vehicle is an alcohol-water medium contg. at least 40 degrees of ethyl alcohol such as cognace, or edible alcohol equivalent, or an edible oil, or their mixtures. The liquid is under a pressure of 2-9 bars of gas, pref. N2, rare gases, NO or CO2, used as propellant. The gas phase occupies at least 20% of the total volume of the bomb. The liquid vehicle ensures protection of the food product from bacterial or cryptogamic attack. The fresh or dried natural product is micromised to a particle size of 0.2-50 mu and consists of 1-15% of the total aromatic products. Used for flavouring food.
