Abstract

It comprises a liquid food acid (pref. 20-90%), a liquid food derived from plants and various other ingredients such as spices and aromatics. It possesses a powerful aroma and flavour and improves the dietetic and digestive properties of foodstuffs. An example contains 6-8 pbw. of cider vinegar, 1.5-3 pbw. of fruit brandy, 0.5 pbw. of sugar syrup with addition of small quantities of cinnamon, nutmeg and pimento.
