Abstract

The continuous fermentation process e.g. for beetroot wort, gives continuous operation combined with complete and homogeneous fermentation. The wort is made to flow through a series of vertical passages, following a path which is alternately upwards and downwards in successive, adjacent passages. Pref. the passages are annular and formed by a set of concentric, vertical cylinders, and the wort is fed through by a conveyor screw in the central inlet passage.
