Abstract
Grape must is pumped upwardly through a treatment chamber at a flow rate insufficient to allow fermentation to commence and the non-fermented juice fed off from the top of the chamber to a fermentation chamber whilst the solid is continuously removed by a conveyor. Pref. a small quantity of wine, preheated to pref. 70% is injected into the must at the bottom of the chamber, the flow rate of the wine being controlled in dependence on the measured alcohol content in the must half-way up the chamber. The process does not destroy the clarifying enzymes and results in a better colour wine.
