Abstract

Semi-frozen ice cream is introduced into freezing moulds with open upper ends. Cornets are then fed into the moulds and frozen into the ice cream. The ice cream is frozen to an extent sufficient to give a stable product. A short defreezing is then used to detach the ice cream from the moulds. The cornets and ice cream are then lifted from the moulds.
