Abstract

The liquid autolysate of fish containing soluble protein degradation products are fermented using a pure culture isolated from crude "Nuoc-Mam" or pickling vats, at ca. 37-45 degrees C for ca. 36-48 h. The product is then preserved by the addition of 200-250 g/l NaCl. This may then be clarified in a centrifuge and sterilised by a sterilising membrane. The conventional prepn. of this Vietnamese dish takes up to one year, not only giving production inconvenience but involving a high risk of rotting.
