Abstract

Sauerkraut is fermented in vacuo in fixed or transportable tanks in fermentation rooms. The new method seeks to improve the quality and the yield and to eliminate all risk of atmospheric pollution, the sauerkraut ferments in its own juice, out of contact with the microbes in the surrounding air. Fermentation is effected on the closed tank principle and the appts comprises a tank, made from laminated polyester, with reinforcing ribs. Feet are provided but they leave space at the bottom for the fork of a lifting truck. The tank, after filling with the cabbages or the fermented vegetables, is imperviously sealed with a rubber membrane with an integral, inflatable bead. This is inflated and the air is pumped out of the inside of the tank. As the tanks are palletised they can easily be transported to a room where fermentation can proceed at the desired temp., out of contact with air. All risk of pollution is avoided and the working conditions are improved.
