Abstract
Troyes port sausages are normally made by a craft process which limits product to an extremely small tonnage as compared with the demand. Belly of pork, with a dia. of 35-40 cms is cut spirally into strips which are then divided into 2 m lengths; chitterlings are also cut into strips and the various strips piled one on top of the other before passing them into an envelope made from a large intestine about 2 m long. The machine receives the pieces spread out in a uniform layer and compresses them between two conveyor belts made up from a number of bands; circular cutters are placed between each band to cut the meat into a narrow strips. The latter pass into outlet spouts which feed the strips into mandrels on which the sausage skins are pleated. Rotary packing devices facilitate the entry of the strips into the skins which become unpleated under the filling pressure. Output is greatly increased, no specialist are needed and the number of handlers is much reduced.
