Abstract
The coffee concentrate is cooled to a temperature 12.2 degrees, during at least 5 min, and then cooled further to below the eutectic pt. It is then ground, and freeze-dried at a pressure 500 mu, to a moisture content of 1-2:5%, while a product temp. of 49 degrees C, and conditions, avoiding re-melting, are maintained. The coffee is manufactured in a procedure, which is economical, and improves colour, taste, and smell.
