Abstract

1,240,842. Dried coffee extract. GENERAL FOODS CORP. 10 Dec., 1968 [19 June, 1968], No. 58743/68. Headings A2B and A2D. Dried instant coffee is manufactured by a process wherein an aqueous coffee extract is chilled to precipitate wax solids which are separated by centrifuging under a pressure of at least 30 psig, the extract is further cooled to separate ice leaving a concentrated extract having a solids content in excess of 35%, said extract being then frozen and freeze-dried. Ice crystals may be removed in a scrape-wall heat exchanger. Prior to freezing, the concentrated extract may be foamed by an inert gas to an over run of at least 1 : 1.
