Abstract

A large variety of food-stuffs can be reduced to fragments and extruded, notably vegetables, meats, starch products, by giving the reduced food a structure by means of a matrix, such as an algin, which hardens or seats when exposed to a gelling agent. A typical machine consists of an extrusion head arranged vertically above a bath of frying paste containing c alcium ions. This head has a circular cutter and a sleeve with a cutting edge; a relative movement of the cutters slices the extruded pieces successively at the level of the extrusion nozzle. The pieces fall into the bath and are picked up by a conveyor which takes them to two hoppers which sprinkle bread crumbs on each side. The final product is either frozen or removed for trying, as desired. The products have an excellent appearance and an enhanced taste.
