Abstract

Hollow confections are obtained by centrifuging the coating substance in approximately spherical or ovoidal moulds. After removal from the mould the appropriate filling (esp. liqueur) is injected and the hole sealed by warming. They are then enclosed in an envelope which figuratively represents the particular flavour used. Different fruits may be obtained using the same mould.
