Abstract

The preservation and stabilisation of the aroma and flavour of foodstuffs and drinks is achieved by storage in the presence of a Redox-Potential stabilizer. More specif. the stabiliser can be metal, activated carbon an ionic-exchange resin or a preparation or extract of wood or combinations of these products.
