Abstract
Stabiliser preventing undesirable changes in foodstuffs and drinks without reacting with them and affecting their appearance, smell and taste, contains at least one basic amino acid (pref. lysine or arginine) and an edible substance irreversibly absorbing free O2 (pref. glucose-oxidase and catalase, and/or an aminocarbonyl reaction product, esp. a lysin-glucose reaction product).
