LAS ESCAMAS SE OBTIENEN A PARTIR DE GEL DE MANANO PREPARADO MEDIANTE POLVO DISUELTO EN AGUA A UNOS 40JC, CON UNA CANTIDAD DE AGUA ENTRE EL 2,5% Y EL 12%, PUDIENDO AÑADIRSE ALMIDON ENTRE EL 50% Y EL 250% DEL PESO DEL MANANO, Y PROVOCANDO SU GELIFICACION Y CONGELACION SOBRE UNA PLANCHA METALICA O MOLDE CILINDRICO, EN CINTAS DE 15 A 30 MM DE ANCHURA Y 0,5 A 3 MM DE ESPESOR QUE SE CORTAN EN TROZOS DE 20 A 50 MM DE LONGITUD. LA PASTA OBTENICA SE MEZCLA CON LAS ESCAMAS ANTERIORES EN PROPORCION PONDERAL DE 1 PARTE DE PASTA FRENTE A 0,2 A 2 PARTES DE ESCAMAS, COAGULANDOSE LA MEZCLA AMASADA MEDIANTE CALENTAMIENTO.
