Abstract

The cooling process uses a continuously flowing aqueous liquid. A space of constant thickness is formed by arranging a wall provided with at least one orifice facing the part of the product to be cooled, the two surfaces, that of the part of the product to be cooled and that of the wall provided with the orifice, being substantially parallel. The said space is filled completely with the above aqueous liquid, which is introduced into the said space through the orifice(s) provided in the said wall and, using the aqueous liquid itself which is thus flowing, stirring of the aqueous liquid filling the said space is produced.
