PROCEDIMIENTO DESTINADO A MEJORAR LA APTITUD QUESERA DE LA LECHE QUE ENTRA EN LA PREPARACION DE QUESOS DE PATAS BLANDA, CON VISTAS A SU AFINACION, ASI COMO A LOS QUESOS OBTENIDOS POR ESTE PROCEDIMIENTO.CONSISTE EN AÑADIR A LA LECHE DURANTE LA PREPARACION DE QUESOS DE PASTA BLANDA, UNA ENZIMA EXTRAIDA DE UN CULTIVO DE MICROCOCCUS CASEOLYTICUS.DE APLICACION EN LA FABRICACION DE QUESOS DEL TIPO CARRES DE LEST CON LECHE PASTEURIZADA.
